The last of this year’s expert seminars for bakery and pastry, named „Christmas on the Swiss way“, was held in Zagreb, October 16, 2018 in co-operation with Richemont Club Croatia and TIM ZIP company. The seminar was organized with the great support and engagement of the Swiss Richemont Club President, the multi-award winning world and European champion of bakery and pastry, Mr. Francois Wolfisberg.
Twenty-five participants from all over Croatia and Serbia participated in an interactive workshop with live production and tasted various traditional Swiss Christmas products such as crowns, pretzels, salty and sugar doughs, Santa Claus and Christmas tree products, fig bread and Christmas bread. Each of the products has its own unique story about the origin and importance for the country’s tradition.
A lecture on the topic „Application of rogue sourdough in bakery products“, performed by mag. ing. techn. aliment. Nika Mutak, last year’s scholarship winner of the Foundation Ivan Bulić, was held as a part of the program.
Excellent performance and quality exchange of knowledge and skills from the side of Mr. Wolfisberg are considered as an extraordinary contribution to the Croatian and regional bakery.
